Baby red Potatoes are my most absolute favorite as a side dish or snack. This was my first time doing Parmesan crusted, needless to say I fell in love with the combination. Now the recipe is very easy to follow no longer than 45-1hr. First boil your potatoes for at least 5-10 minutes. Let cool then cut in half or quarters, depending on how big some of them are. Mix in some olive oil, seasoning salt or Mrs. Dash, Italian season and Parmesan. Toss thoroughly, making sure the potatoes are evenly coated. Spread on a baking pan, broil on low until crust starts to turn golden brown, and potatoes become crisp. Don't overdue the oil about 1/3 is enough.
